Raspberry and confectionery have always had a great affinity: the red fruit is used for its strong taste in a delicate texture and for its unique mix of sweet and sour which gives the best confectionery creations an inimitable touch.

Combine this with the exclusivity and attractiveness of berries and the raspberry becomes an essential ingredient in Christmas desserts.

So are we ready to choose at least one recipe for the coming Christmas period?

Let's start with this Christmas tart, a very easy cake that I'm sure everyone will love! A very soft and fluffy red base, reminiscent of Christmas, and a tasty and very simple filling of cream and mascarpone cheese! We can decorate it with redcurrants or raspberries, it will be a delicate and fresh cake!

To make the Raspberry Chocolate Supreme Cake, start by breaking up the chocolate and melting it in a small saucepan over a bain-marie.

Raspberry coulis is a thick, very easy to prepare sauce, usually used to enrich and complete panna cotta, cheesecake and desserts in general.
