Sweet, fragrant and rich in water, strawberries also have a nutritional characteristic that may be less obvious at first taste: they are a particularly interesting source of vitamin C. According to a scientific review dedicated to the composition of this fruit, 100 grams of fresh strawberries provide approximately 58.8 milligrams of vitamin C, along with fibre, folates and several phenolic compounds.
The relationship between strawberries and vitamin C deserves attention not only because of a number reported in a nutritional table. Vitamin C is an essential micronutrient: the human body cannot produce it on its own and must obtain it through the diet. It is involved in numerous physiological functions, from collagen formation and antioxidant protection to the normal functioning of several components of the immune system.
Why vitamin C is so important
Also known as ascorbic acid, vitamin C performs several functions in the body. One of the most important is its role as a cofactor, meaning a substance required for certain enzymes to function properly.
These processes include the synthesis of collagen, a structural protein found in the skin, blood vessels, cartilage and many other tissues. Vitamin C is also involved in reactions related to the production of certain biological molecules and has antioxidant properties, helping to control reactive oxygen species that are normally generated by metabolism.
Then there is the immune system. The review published in Nutrients by Anitra Carr and Silvia Maggini describes the involvement of vitamin C in different functions of innate and adaptive immunity, including the activity of certain immune cells and the maintenance of epithelial barriers. This does not mean that eating strawberries makes people immune to infections, but it helps explain why ensuring an adequate intake of vitamin C through the diet is important for the normal functioning of the body.

Strawberries and vitamin C: how much do they really contain?
The review by Francesca Giampieri and colleagues, published in 2012 in the journal Nutrition, examined the nutritional and phytochemical composition of strawberries and the factors that can influence it. The authors report a vitamin C content of approximately 58.8 mg per 100 grams of fresh strawberries.
This amount makes strawberries a particularly interesting food for increasing dietary vitamin C intake through fresh fruit.
However, it is important to interpret this figure correctly. The study by Giampieri and colleagues is a scientific review, not a clinical trial: there was therefore no group of participants who were given a specific amount of strawberries for a certain number of weeks. The authors brought together and discussed the available knowledge on the composition of the fruit, its nutrients and its bioactive compounds.
In addition, 58.8 mg per 100 grams is a reference value and not an amount that is identical in every single strawberry. Cultivar, degree of ripeness, growing conditions and storage can influence the final composition of the fruit.
More than vitamin C: the nutritional strength of the whole strawberry
Focusing on vitamin C should not make us overlook an important point: when we eat a strawberry, we are not consuming an isolated nutrient but a complex food matrix.
The review published in Nutrition also highlights the presence of phenolic compounds in strawberries, including anthocyanins and ellagitannins. Anthocyanins are among the substances responsible for the fruit’s characteristic red colour. Strawberries also provide fibre, folates and other micronutrients.
It is precisely this combination that makes strawberries interesting from a nutritional perspective. Vitamin C can be considered one of their key strengths, but the value of the fruit is not limited to a single component.
This is also one of the reasons why it is useful to distinguish the consumption of fresh strawberries from the intake of supplements or concentrated extracts. Effects observed with high doses of an isolated substance cannot automatically be transferred to the consumption of the whole fruit.

Vitamin C, collagen and antioxidant defences
One of the most interesting aspects of vitamin C is its dual role as an enzymatic cofactor and antioxidant.
In collagen formation, vitamin C takes part in reactions that are essential for producing a stable protein structure. This process affects numerous tissues in the body and helps explain why an adequate intake of vitamin C is physiologically important.
Its antioxidant activity, on the other hand, is linked to its ability to donate electrons and contribute to the neutralisation of oxidising molecules. Here too, it is important to avoid oversimplification: eating strawberries does not create a “shield” against every form of oxidative stress. However, regularly including them in a diet rich in fruit and vegetables means consuming vitamin C together with other bioactive plant compounds.
For consumers, the most practical message is therefore simple: choosing strawberries means bringing to the table a fresh fruit that combines highly appreciated sensory qualities with a particularly interesting nutritional profile.
How to make the most of strawberries in the daily diet
Strawberries have a very practical advantage: they can easily be eaten fresh, without elaborate preparation. They can be included in breakfast with yoghurt and cereals, added to a fruit salad or enjoyed as a snack.
Eating them fresh also allows the fruit to be enjoyed in its entirety, together with vitamin C, fibre and phenolic compounds. There is no need to turn them into juices, extracts or concentrated products in order to benefit from their nutritional value.
Variety remains essential, however. Strawberries can contribute to vitamin C intake, but they should not replace other fruits and vegetables: alternating different plant foods helps provide a broader range of vitamins, minerals, fibre and bioactive compounds.
